  1. Be careful to know how your cooking surface heats up This is a very large, well made pan, coated with their “ceramic” non PTFE coating. One might expect ceramic to be very heat resistant, it’s not. Best I can tell, this is a silicone based material (which one could call ceramic, but it is a stretch). So now, the maximum temperature it should be exposed to is 400 degree F. Sounds reasonable, but after checking my stove (a major brand convection oven with glass cooktop), I found that there is a huge temperature variation from center to…

  2. Possible fake – not as advertised. Not sure what’s going on here… I own a bunch of Zwilling J.A. Henckles cookware purchased from Williams Sonoma and bought this 8″ pan to complete my set. Looked good out of the box but now after a few months I’m wondering what the deal is with this pan! The non-stick works great, but the pan does not shine up like my other Zwilling pans, and now that it’s hanging up I am noticing that it says Made in Vietnam on the bottom, not Made in China as advertised here or as on the other Zwilling…
