Excellent Omelet Pan I have used Calphalon “Unison Slide” pans for eggs for years. I decided to try the “Signature” model and have not been disappointed. So far, its performance with respect to eggs/omelets is every bit as good as the Unison Slide. It disperses the heat evenly while allowing eggs to cook without sticking to the surface.
