Domed bottom kills otherwise great pan So, like the rest of the Professional T-Fal line, the pan is almost perfect with a fatal flaw (for me)…the bottom of the pan is domed, it has slight hump in middle, so fluids run to the sides. Eggs won’t form in circle or oval, they spread lopsided. Omelettes are thinner in the center, thus cook more quickly and thicker on the edges which leads to uneven cooking. Nicely sized induction-friendly nonstick skillet The red spot that’s supposed to show if the skillet is heated up enough to cook appropriately did not work as well as I liked. It turned sort of solid red but remained somewhat red, although I could tell by the look of the heated corn oil the oil was hot enough to stir-fry.
