Why did I wait so darn long?? I’m middle aged and this is my first expensive/quality pan. It has made such a difference for me, I love cooking with it. I bought it specifically because 1) I needed a 14″ pan for larger amounts of ingredients and, 2) my non stick pans produced so much liquid that never evaporated, so I had terrible difficulty reducing the liquid in a recipe, or by the time I did, the other ingredients, particularly veggies, were mushy and unappealing.
