This pan is perfect. Buy a Matfer or De Buyer for high heats and oven use as a cast iron alt. Other than that, buy this pan. It’s lighter and more versatile like a nonstick pan, yet able to handle high heat and perform like the heavier carbon steel pans. Why? Because it is a carbon steel pan. Just less thicker gauge. I’ve been cooking on cast iron for 50yrs, but the weight of some of my favorite skillets was becoming troublesome. I remembered my grandmother had some lighter skillets that had the same patina (seasoning) as her cast iron, I did some research and discovered the BK Natural Steel Frying Pan.
