Fantastic Frying Pan This frying pan is fantastic for searing foods. I used it for steaks and it cooked evenly and heated quickly. Downside is that I had to cook each steak by itself since the bottom surface is 7.5″. Also, use caution simply because it does heat up fast so no pre-warming necessary. A great addition to our existing Emeril cookware We got the 3 quart sauce pan, which is actually shorter and wider than what I would consider a typical 3 qt sauce pan. That’s good and bad. The good is that it provides a larger bottom surface area, so it heats more quickly and evenly across your food. The bad is that it can’t share lids with our 1 qt pan/steamer/etc that are all the smaller diameter.
