LOSES EFECTIVNESS IF TEMPERATURE OF PAN EVER EXCEEDS 500 DEGREES. The problem with these non-stick ceramic coatings whether titanium based as in this Gotham Steel product or copper based as with their competitor is that the coatings lose their non-stick ability when they are heated to over 500 degrees F. This is fine for items that are put into the oven or for pots and pans where you are heating something that has water in it (water boils at 212 degrees F so you can’t heat it above 212 degrees). I want to love it ….. but, I can’t This is the second Gotham Steel pan I’ve bought. The first one got little chips in the non-stick surface and started sticking. I returned that one and bought another — this one — because, overall, I loved that non-stick surface. This one is holding up as far as the non-stick surface goes – but I have not used metal utensils, nor have I put it in the dishwasher. That is why the problem with this pan is so vexing.
