Perfection! This is the American home size version of the larger commercial Euro baking sheet. These are the gold standard for baking sheets. Made from blue steel, not black steel, the sheets are heavy, have small curved sides to allow you to slide food on and off without damaging the food and have the ability to allow magnets to stick to the sheets. This is not black steel. It is a blue coating. I purchased this and seasoned it following the instructions on their website. Proceeded to to bake a seed bread in a 350 degree oven. The pan warped at this temperature, but flattened out upon cooling. When I removed the bread from the pan, there was a blue coating all over the bottom. It did come off when I scraped with a knife. The blue had lightened from the pan where the loaf sat. The raisins in the bread ate right through the bluing. What is this stuff coming off onto my food? I don’t…
