Perfection! This is the American home size version of the larger commercial Euro baking sheet. These are the gold standard for baking sheets. This is not black steel. It is a blue coating. I purchased this and seasoned it following the instructions on their website. Proceeded to to bake a seed bread in a 350 degree oven. The pan warped at this temperature, but flattened out upon cooling. When I removed the bread from the pan, there was a blue coating all over the bottom. It did come off when I scraped with a knife. The blue had lightened from the pan where the loaf sat. The raisins in the bread ate right through the bluing. What is this stuff coming off onto my food? I don’t…
