The 10″ (25cm) Open Flame Skillet With Smooth Finish by AUS-ION is 100% made in Sydney from one seamless piece of 3mm thick Australian sheet iron. Designed for use over an outdoor open flame, the perforated pan is great for grilling small, delicate foods like fish, mushrooms, peppers, asparagus, zucchini and even pizza! The perforations allow the smoky grilled flavor to penetrate food while excess fat drips away. The Open Flame Skillet nests inside the AUS-ION 10.2″ skillet for traditional indoor cooking methods to achieve the grill marks while excess drippings collect in the larger skillet.  AUS-ION cookware is built to last with features and details professional chefs look for in a pan: high quality, comfortable to use and easy to clean. With seamless one-piece construction there are no rivets, so there is nothing for food or steel wool particles to get caught in. The wide, concave ergonomic handles are more comfortable to use allowing better control and less hand fatigue. The generous venting in the handle neck reduces heat transfer for a cooler handle. The pan cooks like cast iron but is lighter weight, heats evenly and will not warp. Naturally pre-seasoned, this pan offers a healthy nonstick option; it is not coated like many steel pan brands, so it arrives ready to cook, no stripping necessary. AUS-ION pans are suitable for use at high heat over any heat source. For best results, follow our instructions. To clean: after cooking, use a wooden utensil or steel wool to gently scrape pan under hot running water. It is best to clean while the pan is still very warm. If necessary, you may use a brush, but be careful not to take off too much of that beautiful seasoning that you have built up! Do not use soap, as it will erode the seasoning. Dry thoroughly with a paper towel while the pan is still warm. If the pan is still relatively new, return to the stove top and wipe the interior of the pan with a small amount of oil, heat until smoking. Then, using tongs, wipe off the excess oil.

  1. Love this pan! Love this pan. I know there is a newer version that has been roughed up a bit to improve seasoning but all the French carbon steel pans are smooth and they season up fine. For the price discount on this “smooth finish” I jumped at it. And I love it!!!!! I used Crisbee to season it. I did 3 oven seasonings and then did the cook top seasoning. I followed the Auz-Ion instructions for cook top seasoning. Did 3 wipings while it smoked. Then set it aside to cool. Then repeated. The…

  2. The Aus-Ion line and my experiences This is just a beautiful and functional pan. I love carbon steel, and this was the best I could find.After seasoning it in the oven six times with flax oil, it worked great for about two weeks.
